Cooking For Everyone
Most people balk at the idea of cooking for large crowds of people. With images of huge stockpots boiling over and becoming chained to a hot stove and oven for countless hours on end, it’s no wonder that so many people avoid the idea of cooking food for large crowds with more tenacity than they avoid being last in the dinner line.
The good news is that it doesn’t have to be the frightening proposition that so many make it out to be. When it comes to cooking for a large crowd, the planning phase is the most important. You absolutely must plan your meals when feeding a large group of people. This goes far beyond the notion of spaghetti or fried chicken as the meals you are planning. You need to know how many servings you will need. While obviously you never know how hungry people will be or who will eat how much when it comes to cooking for a large crowd it is a good idea to always plan for a few extra mouths in case some need a little more than you may think (you might want to double servings for teen and college aged men that will be dining).
You need to know at least a general number of servings to prepare and adjust your recipe in order to accommodate those needs. Some people find it much simpler if they can double or triple recipes rather than scaling them to specific serving sizes. If this… Continue reading

Pairing Lombardy Pastries And Desserts With Sweet Wine – I Love Italian Regional Cuisine
Poor old Lombardy has no seacoast. So she has to make do with some of the finest lakes in all of Europe. Its capital Milan is Italy’s center of finance, fashion, and the media. Did we mention the region’s voluminous agricultural output? Expect to find fine wine and food in this lovely region.
Colomba Pasquale (Easter Dove) is a great yeast cake that ends up looking like a dove, especially if you buy a mold. Among its ingredients are egg yolks, diced candied orange and lemon rinds, milk and almonds. It’s a hands-on recipe, but if you’re lucky enough to live near a good Italian bakery you may be able to buy it at Easter. Traditional wine pairings include fizzy or sparkling (the sparkling is more fun) Asti DOCG from the neighboring region of Piedmont, the nearby red or rose Malvasia di Casorzo d’Asti DOC available in a wide variety of styles, and the Tuscan white Moscadello di Montalcino DOC. You won’t have trouble finding the Asti or probably the Moscadello. No promises for the Malvasia.
Cannoli con Ricotta (Ricotta-stuffed Rolls) are made from flour, cocoa, chocolate, white wine, candied fruit, ricotta cheese, and some other ingredients. They are not all that easy to make but this is one dessert that you can find at many Italian bakeries. Recommended wine pairings include Malvasia di Bosa DOC made in Sardinia and the Sicilian Moscato di Pantelleria DOC which when made from dried grapes is known as Moscato Passito di Pantelleria DOC.… Continue reading
How To Organize Your Recipes
Most of us who do any amount of cooking will have untidy collections of recipes. They may include cookbooks, recipes torn from magazines or cut from packaging, recipes printed out from the internet, and handwritten recipe cards with family favorites. How do you organize them so you can actually find the recipes you want?
Get one or two big binders, a box of page protectors, and a few packages of dividers from the school supplies section of the local shop. You can put all your recipes from magazines, packages and the printer into these handy page protectors. The page protectors not only keep them organized in the binder, they protect the recipe from spills and grease while you cook.
You can get special page protectors built for index cards to hold all your old family recipes that have been shared on traditional recipe cards. These pages will protect all the handwritten recipes you have gotten from your grandmothers, mothers, cousins and so on. Organize the cards so all the soup recipes are together, the cake recipes are together; you get the idea.
Create your categories. Besides meat, poultry, breakfast, cookies, and so on, you can create subcategories to divide specialties in each category. For example, in your appetizer category, you may want to have summer appetizer recipes grouped together so you can find all the great foods you can make with seasonal produce for your summer barbecues.
Holiday appetizers would contain all the recipes that you love to make… Continue reading
There Really Is Nothing Better Then A Good Beef Stew
Throughout the summer the barbeque is the king of dinner. As the weather cool the crock pot comes out and the beef stew start too cook.
This is just a basic recipe but it is easy enough to modify to suit your own taste. Once you have this basic version mastered you can change it up as you need to.
The first thing is to heat up the crock pot with some hot tap water. Fill the pot with hot tap water and start to heat it up. I don’t like to heat up the crock pot without liquid in it. I don’t want to crack it.
Then in a large saucepan add some oil to the pot and let it heat up add the beef and start to brown it. Seer the meat will lock in the flavor. Make sure all the sides of the cubed meat get browned. Keep an eye on the heat , you don’t want to burn the beef to the pan. I generally use about 6 on my stove. Cook the meat about half way and then remove from heat and set aside.
Add a little oil if needed and start adding your cut carrots, potatos and onion. Get everything moving around so everything gets covered in the oil. You also want to scrape off the bits left on the pan from seering the meat. Cooking Tip: There is a ton of flavor left in the “pan drippings”.
Allow these veggies… Continue reading
